Fluffy Pancakes with Mixed Berries

Ingredients:
- 1 ½ cups all-purpose flour
- 3 ½ teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon white sugar
- 1 ¼ cups milk
- 1 egg
- 3 tablespoons melted butter, plus extra for greasing the pan
- 1 cup mixed berries (fresh or frozen), plus more for serving
- Maple syrup, for serving
Instructions:
- In a large bowl, sift together the flour, baking powder, salt, and sugar.
- In a separate bowl, whisk together the milk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Don’t overmix; a few lumps are okay. Gently fold in the mixed berries.
- Heat a lightly oiled griddle or frying pan over medium-high heat.
- Pour about ¼ cup of batter per pancake onto the hot griddle.
- Cook for 2-3 minutes per side, or until golden brown and cooked through.
- Serve immediately with extra berries and maple syrup
