Fluffy Pancakes with Mixed Berries

Ingredients:

  • 1 ½ cups all-purpose flour
  • 3 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 ¼ cups milk
  • 1 egg
  • 3 tablespoons melted butter, plus extra for greasing the pan
  • 1 cup mixed berries (fresh or frozen), plus more for serving
  • Maple syrup, for serving
    Instructions:
  1. In a large bowl, sift together the flour, baking powder, salt, and sugar.
  2. In a separate bowl, whisk together the milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Don’t overmix; a few lumps are okay. Gently fold in the mixed berries.
  4. Heat a lightly oiled griddle or frying pan over medium-high heat.
  5. Pour about ¼ cup of batter per pancake onto the hot griddle.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  7. Serve immediately with extra berries and maple syrup
