Energy Salad with Chickpeas and Sweet Potatoes

Ingredients (for 2 servings):
200g cooked chickpeas (rich in protein and fiber)
1 medium sweet potato (complex carbs with a moderate glycemic index)
2 handfuls of fresh spinach (high in iron and vitamins)
30g walnuts or almonds (healthy fats and energy)
50g crumbled feta cheese (protein and calcium)
1 tbsp olive oil (healthy fat)
Juice of ½ lemon (vitamin C boost)
1 tbsp plain yogurt (for the dressing)
1 tsp mustard
Salt, pepper, and paprika
Preparation:
1. Cook the sweet potato:
Peel and cut the sweet potato into cubes.
Roast in the oven at 180°C (350°F) for 20-25 minutes with a drizzle of olive oil and a pinch of paprika.
2. Prepare the dressing:
Mix the yogurt, lemon juice, mustard, salt, and pepper.
3. Assemble the salad:
In a large bowl, combine the chickpeas, spinach, feta, and nuts.
Add the roasted sweet potato cubes once they have cooled.
Drizzle with the dressing and mix gently
